INGREDIENTS
- 125g barley flour
- 125g whole barley flour
- 2 tsp baking powder
- ½ tsp ground nutmeg
- ½ tsp salt
- 160g soft margarine
- 230g brown sugar (or other sweetener)
- Vegan egg substitute (2 eggs)
- 3 ripe bananas
- Soft margarine for greasing
- A little flour for dusting
- Dark chocolate for glazing
HOW TO PREPARE
1) Preheat the oven to 170°C. Grease a baking dish of about 25 cm with butter and sprinkle it with flour. 2) Sift the barley flour, whole meal flour, nutmeg, and salt into a bowl. Mix the margarine and the sugar until foamy. Mix the vegan egg substitute and mashed banana well. Add the flour and mix all into a smooth dough. 3) Fill the baking dish with dough, and bake for about 45 minutes, or until the cake turns light golden brown and starts to pull away from the sides of the baking dish. Check this by the toothpick test. If it browns too quickly, put a piece of aluminum foil loosely over the baking dish. 4) Allow cake to cool in the baking dish for 5 minutes then let it cool completely on a cake rack. Decorate with melted chocolate, in a double boiler. Delicious and easy to make… Bon appetit!
